Production 

Chardonnay from 0.7 hectares of the Saint-Aubin Blanc 1er Cru vineyard. Planted in 1988, this vineyard is located on the southern slope of Mont Rachet overlooking Chassagne. The grapes were harvested by hand with transport in crates to process whole and intact grapes. The grapes were crushed and then pressed in an old basket press once they arrived at the fermentation cellar. The must was left in tanks for two to three days to allow the lees to settle. After alcoholic and malolactic fermentation, the wine was aged in used barrels, not fined, not filtered and only lightly sulphured.

    The Saint Aubin 1er Cru is a Chardonnay with a wonderful concentration of ripe pears, lemons, pineapple, crisp apricots and peaches, which mingle here with lemon curd, white nougat and a little melted butter and crushed stone.
