Production
We grow, press and use our own grapes only. We have 2 presses 4000 kgs Coquard. One traditional from 1972 and the second from 2001, fully automatic, unique in the area. We ferment on site and do the malolactic fermentation for 100 % of our wines in small vats only. We seperate each vineyard and each year in order to realise the most precise possible blend. This is a blend of 2 very good years.15 % goes in wood. We use local oak trees and we stop before it gets too obvious. Disgorgement is still done by hand with no ice. Traditional.
