Fermentation at controlled temperature (18 to 2O°). Aging in vats on fine lees for 6 months with stirring. Racking preferably coordinated with the lunar calendar.

Tasting notes
This Viognier grape variety produces a white wine with fruit aromas, supported by a creamy texture. It bursts on the nose and on the palate with fruity notes of peach, citrus, exotic fruits and almonds. The extreme complexity of this cuvée is enriched by the innumerable scents of the Mediterranean shrubs that surround this vineyard. This is also the terroir effect that generates typicality.

This wine is very suitable for tasting before a meal, or accompanies a meal of shellfish, sea fish, goat cheese or Asian cuisine. It can be kept for 3 years. The service temperature varies from 10° to 12°.
