Production
The grapes are crushed and completely destemmed. Fermentation is started rapidly without maceration. Aromas, tannins and colour are extracted naturally (no enzyme addition, no forced heat extraction) only through punching of the cap.
Vatting time is 10-12 days. Free-run wine and first press are blended, settled cold and put in barrels. Aux Clous is left to mature in barrels, 15% to 20% of which are new oak. Oak comes from the forests of the Allier region, which give an aromatic elegance, and from the Nevers region, adding a more complex structure. Maturing takes place over a year; the wine is then bottled with no fining, and only a slight filtration.

Color: A concentrated coloration of deep red with purple highlight sprecedes
Nose: Still young, it already shows nice aromas of blackberries and strawberry.
Palate: The Savigny 1er Cru Aux Clous is a relatively powerful wine with good structure, and will develop well with a few more years ageing in cellar.
