Production
The grapes are hand-harvested and 100% crushed and de-stemmed by hand. There is no cold maceration, and the fermentation starts within a few days. No use of enzymes or overheating. Fermentation lasts approximately 12-14 days. Approximately 35% of barrels are new ones, the others are up to 4-5 years old. Aging in the barrel lasts from 12-15 months according to the quality and style of the vintage.

Tasting notes
With its charming ruby red color with subtle blue, its flavors have a good intensity of red berries combined with a touch of licorice. The mouth is ample, elegant with well-rounded tannins, hiding the good underlying structure. It has good persistence.
Food match
Perfect with red and white meats, game, poultry, cheeses, pasta, pies, etc. Serve at around 18°C within 5-6 years of purchase.
