Production 

The vineyard Selection of Chardonnay planted on 161-49. Vines still relatively young, but well balanced, with controlled vigor. Soil / subsoil Clay-limestone soil, known as “rendzine”, on compact limestone.

Soil shallow and not very fertile, draining and warming quickly. Exposure Facing south, this plot benefits from ideal sunshine. It is located about 390 m above sea level, above Savigny-les-Beaune.

Vinification The grapes are crushed, then pressed in a pneumatic press, cold settling for about 24 hours. The clear must is fermented in barrels (10% new barrels) and half in stainless steel vats, with temperature control. It will be aged on the lees for 10 to 12 months. The wine is bottled without fining, after filtration on plates. Wine Production is around 9000 bottles on average.

Bourgogne Hautes Côtes de Beaune is a fresh and lively wine, to be enjoyed on the fruit. Very pale color, mineral nose with some notes of white flowers, a certain roundness: it is a simple wine, but which does not lack appeal
