Production 

Harvested by hand and at full maturity, the grapes are immediately pressed, and the juices placed in static settling. Only the clear juices are transferred to oak barrels, for complete the alcoholic and malolactic fermentations. Aging on lees with regular stirring until bottling. Bottling is preceded by fining and light filtration if necessary.
